Green onions sliced
1/4 cup Feta Cheese
1 cup breadcrumbs
1 extra large egg, raw
Bloody Mary Mix for a little kick - 100 gms was the only choice on the list....I used just enough for some added moisture

Directions:
Slice mushrooms and onions and sautee in extra virgin olive oil. Add fresh spinach and continue to sautee until spinach leaves are slightly wilted and bright green. Drain and soak up any extra oil with a paper towel. Add this along with the rest of the ingredients to the ground chicken and mix well. Separate in to 6 balls and place in muffin pan. Bake at 350 for 45 - 45 minutes or until toothpick comes out clean.

fat a bit on the high side as well... as compared to the other macronutrients.

1 1/2 t. Ground Cumin
1 T. Onion Powder
Salt and pepper to taste
Cayenne pepper to taste
Cilantro for garnish

Directions:
1. Brown Ground Chicken in a large pot over a medium heat until meat is almost completely cooked, just small amount of pink should be left. Crumble meat as it cooks.

2. Add onion and minced garlic to meat, cooking until meat is done and onions begin to soften and become translucent.

3. Season meat mixture with salt and pepper and a pinch of chili powder.

4. Add remaining ingredients except pinto beans to the pot and cover and lower heat to low.

5. Simmer for about 25 minutes, tasting every so often and adjusting seasoning as needed. Add additional water if chili becomes too thick.

6. Add beans to pot and simmer 10 mins more.

7. Serve with low fat cheese and sour cream and Garnish with Cilantro and chopped onions if desired. This chili is even better the next day!

3 Lg fresh Brussels Sprouts
1 Can Sweet Corn (Fresh is better if in season)
1.5-2lbs Ground Chicken
2tbsp Vegetable oil
Salt and Pepper to taste.

Directions:
Slice Shallots and Garlic, and get them started in a 12in saute pan over medium heat.

While that is getting going give your sprouts a quick run through with you knife. I sliced them the same way I did the shallots and garlic, but feel free to cut them in half and then quarters if you want a bigger bite.

Once shallots are starting to really look translucent add in you chicken. This is the point in which you can season the meat anyway you please I just used a little salt and pepper the first time, but spice it up if you like. I added a little hot sauce the second time through, and lemon the 3rd.

Once the chicken is nearly cooked through add the sprouts and corn. When the chicken is done feel free to spoon over any kind of leafy greens, rice, or fill a tortilla.

This looks interesting. I guess it would be very much the same as ground beef. You could possibly use it with similar ingredients. The recipes look so tasty, that I am also thinking about buying ground chicken.

Thank you for all the great recipes for ground chicken. I, also, use ground chicken when I am making chili. There are a few recipes that you posted on this thread that I am wanting to try. The mini meatloaves is one them.
