Default Mediterranean Fish



Ingredients:
1 lb fresh Cod
4 medium size Tomatoes
2 tbsp Olive Oil
1/2 cup sliced Green Olives
3 tbsp Capers
1 tbsp Garlic, chopped
1 Red Bell Pepper, chopped
1/2 Yellow Onion, chopped
1/4 cup Low-sodium Chicken Broth
Salt and Pepper, to taste
1 cup Spinach

Directions:
Heat a large saute pan over medium heat. Add olive oil, fresh garlic, and whole tomatoes.
Cover and let simmer for five minutes, or until tomatoes begin to soften.
Add chopped onion, bell pepper, olives, capers, chicken broth, and salt and pepper.
Cover and let simmer another five minutes, or until tomatoes are broken down and onion and bell pepper have softened.
Add cod to pan, cover, and poach for about 5-7 minutes.
In the last minute, add spinach to top.
