Default Grilled Halibut with Cherry Tomatoes

Makes 1 serving



Ingredients:
4 oz halibut
1/2 tbsp olive oil
1/2 cup cherry tomatoes, halved
1 tbsp chopped parsley, basil, or whatever fresh herbs you prefer
1 lemon wedge
Salt and pepper, to taste

Directions:
Light grill.
Brush fish with olive oil, salt, and pepper.
Place fish and sliced tomatoes on grill.
Cook fish about 4 minutes each side, or until thoroughly cooked. When finished, tomatoes will be slightly charred.
Top fish with tomatoes, fresh herbs, and a squeeze of lemon.

That looks so good. I love grilled fish, and haven't had it in so long. I'll definitely be making this soon.

Wow, such a simple recipe but that picture... That definitely looks complicated in the picture. But the good thing is it's not and a lot of newbies in cooking can try this out. Plus, it's very healthy since it's grilled and it's loaded with tomatoes (which are full of lycopene). My son loves tomatoes, he even eats them as is. I'm sure he'll devour this more than me even! Haha!
